GOLD - Rob Rattray's own boiled ham

A butcher, a farmer, and a stock-judge - Rob Rattray definitely knows what makes good meat. He has practised and perfected the tricks of the trade, which has eventually led to great success.

The Aberystwyth butcher’s business has grown steadily since he started with the shop in 1991. Since then, as well as being popular and dependable with local customers, he has won council contracts to supply local schools with meat, Bronglais Hospital and the National Library. But with more demand, more preparation space was needed. The solution - build a new boning and meat preparation plant on his farm at New Cross.

This is where his local-bought pigs are brought to after being slaughtered in a local abbatoir, cut to perfection, cured with a mixture of sugar and spice, before being taken down to the shop, where the ham is boiled and prepared.

Rob Rattray, said: “We are very pleased to be a winner in the True Taste Awards with a product which is entirely local. The ham comes from animals reared on a farm in the Aeron Valley, cured by us at our unit and cooked at the shop. It is a product which is very popular with customers and we are extremely proud to be able to offer them a True Taste Award Winning product”.
