A specialist grower of edible flowers, salad leaves, herbs, microleaves, microgreens, cresses and peashoots, Derek Lewis founded Firstleaf in 2004.
After working in agricultural research for 25 years, Derek decided to develop a specialist salad business growing extremely small leaves of herbs and salads. This kind of produce was new in the UK at the time, with only a handful of examples to be seen in America. When seeds have sprouted and formed their first leaves, these are harvested rather than grown to maturity, and the whole process can take as little as 7 to 10 days from sowing to picking for some varities. But despite their diminutive size, these leaves have intense flavours punch – and they also look pretty on the plate.
This first class produce is grown in the Preseli Hills, Pembrokeshire, in an environmentally friendly way, without the use of pesticides.
